King Salmon Lox

Ingredients:
5
Lbs. salmon filet, skin on
10 Tablespoons brown sugar
5 Tablespoons liquid smoke
4 Tablespoons salt
Mix last three ingredients into a paste and rub on
filet.
Wrap well in plastic or vacuum seal.
Leave in bottom of refrigerator for one week turning
frequently.
Remove, rinse and slice.
This
recipe is for King salmon. If smaller fish is being
used, it will require less time in the refrigerator.
If it is too salty soak it in fresh water.
